 Creamy Peanut Pie July 2010

3 eggs                         1tsp vanilla extract
1 cup dark corn syrup     1 cup salted peanuts
1/2 cup sugar                Deep dish pie crust, unbaked
1/2 cup creamy peanut butter Whipped cream
 
Beat together eggs, corn syrup, sugar, peanut butter and
vanilla until smooth and thickened, about four minutes.
Stir in salted peanuts and blend. Pour mixture into pie shell.
Bake at 400 degrees for 15 minutes, then reduce heat to 350
degrees and bake until knife inserted in center comes out
clean, about 30-35 minutes. Cool completely before serving.
Top each slice with whipped cream.
